Over the past few years, artificial intelligence (AI) has evolved into a game-changing technology across various sectors. The endorsement of Thailand's national AI strategy and action plan (2022 – 2027) signifies a crucial step towards harnessing AI’s benefits. With a focus on ten target sectors, the strategy aims to cultivate an ecosystem conducive to AI development, fostering economic growth and enhancing the well-being of Thai citizens. Among these sectors, food industry stands prominently as an immediate priority.

To identity the strategic directions of research and development of AI applications in the food industry in Thailand, technology roadmapping approach can be used to help identify strategic target needs from the industry, the current research activities, and the future research directions. With these insights, policymakers can understand the real needs of the industry and allocate appropriate budgets to R&D programs that address industry-specific challenges and foster sustainable growth.
